Whining About Wine
The NYT has a story today about Leo McClosky, a chemist that specializes in the wine industry. His company, Enologix, analyzes the chemical make-up of grapes to inform vintner how to get their wines to score in the nineties. The net result is wine become more homogeneous, and lose their sense of terroir. It's an interesting read.
